October in Australia is well into spring, bringing an abundance of fresh seasonal produce. One lesser-known vegetable worth celebrating this month is garlic scapes. Garlic scapes are the tender green flower stalks of garlic plants. With a mild garlic flavour and crisp texture, garlic scapes are incredibly versatile and a delicious way to add flavour and nutrition to spring meals.

Garlic scapes are naturally low in energy while providing vitamin C to support immune function, vitamin A for healthy vision and skin, and small amounts of folate and potassium. Like garlic bulbs, they also contain beneficial sulphur-containing compounds, including allicin precursors, which have antioxidant properties and contribute to overall health.

Their fresh, mild flavour makes them an excellent way to enjoy the benefits of garlic without the stronger taste, and they can be eaten raw or cooked. They add colour, crunch, and a nutritional boost to a variety of dishes during their short spring season.

Using Garlic Scapes with Corn Thins slices
Corn Thins slices provide a light, crunchy base that complements the fresh flavour of garlic scapes. Here’s an easy seasonal snack idea:

Garlic Scape Pesto Corn Thins:

1.        4 Corn Thins slices

2.        2 tablespoons homemade garlic scape pesto

3.        Optional: sliced cherry tomatoes or crumbled feta

4.        Sprinkle of cracked black pepper

To make a simple pesto, blend garlic scapes with extra virgin olive oil, toasted almonds or pine nuts, parmesan, and a squeeze of lemon juice.

This combination provides complex carbohydrates, healthy fats, and antioxidants, making it a satisfying and flavour-packed spring snack.

Tips to Enjoy:
• Finely slice raw garlic scapes into salads for a mild garlic flavour and extra crunch.
• Stir chopped garlic scapes through scrambled eggs or omelettes.
• Toss them into stir-fries or roast them whole alongside seasonal vegetables for a sweet, mellow flavour.

Celebrate the fresh flavours of October with garlic scapes—a unique spring vegetable that brings vibrant flavour, colour, and nutrition to your meals and pairs perfectly with Corn Thins slices.
