Smoked salmon, cream fraiche and a sprig of mint

Smoked salmon, a dollop of cream fraiche and sprig of mint to garnish.

Fresh prawns, sliced cucumber and dill

Fresh peeled prawns, with sliced cucumber and dill to garnish.

Fresh egg salad and caviar

Hard boiled eggs mixed with creamy mayonnaise, finely chopped onion and a pinch of paprika (optional). Topped with a teaspoon of caviar.

Smoked chicken and avocado

Smoked chicken, sliced avocado, radicchio lettuce, a dollop of mayonnaise and snow pea sprouts to garnish.

Salmon chunks, rocket and cracked pepper

Fresh salmon chunks with rocket and cracked pepper to season.

Egg, radicchio leaves and chopped chives

Sliced hard boiled egg, radicchio leaves and chopped chives to garnish.

Lamb, Chutney, Rocket & Roast Pumpkin

1. Slice roast pumpkin into cubes or slices
2. Place chutney onto Corn Thins.
3. Top with lamb & roast pumkin
4. Lastly, place rocket on top

Lamb, Dill yoghurt & Cucumber

1. Wash & slice cucumber
2. Cut roast lamb into strips
3. Place a small amount of dill yoghurt, sliced cucumber & lamb onto Corn Thins
4. If desired add an additional small amount of dill youghurt & a piece of dill on top.

Smoked salmon, asparagus & salsa

1. Slice salmon into thin strips & cook asparagus
2 .Place a small amount of hummus onto Corn Thins then top with salmon & asparagus
3. Add a small amount of salsa on top

Chicken, hummus & tomato

1. Slice tomato into pieces
2. Place a small amount of hummus onto Corn Thin and top with tomato & chicken
3. Garnish with sprouts

Egg, Ham & Tomato

1. Mash up a boiled egg & cut up a tomato
2. Place a small amount of mashed egg with tomato and ham onto Corn Thins
3. Top with some chopped chives

Tuna, Rocket & Mayonnaise

1. Slice tuna into pieces & wash rocket
2. Place a small amount of mayonnaise onto Corn Thins & top with tuna & rocket

Pumpkin Soup & Corn Thins

To make Pumpkin Soup
1) Heat oil (2 tbs) in a large pot & fry onions (1, diced), ginger (3 tbs, grated), lemongrass (1 stalk, tenderised), chills (to taste), over a low heat until onions soften.
2) Add pumpkin (1kg, cubbed) and simmer for 10 mins, stirring frequently.
3) Pour stock (1 Ltr) and bring to the boil then reduce heat and simmer for 10-15 mins.
4) Remove lemongrass, blend with season with salt & pepper to taste.
5) Drizzle with a small amt of coconut milk & serve with Corn Thins.

Fresh Egg Salad & Caviar

1) Place lettuce leaves on top of Corn Thins
2) Top with a dollop of fresh egg salad and a teaspoon of caviar

To make fresh egg salad, mix 2 eggs, 2 tablespoons of mayonnaise, half a finely chopped onion and a pinch of praprika.

Moroccan Lamb Tagine

1) Toss lamb (500g cubed) in seame oil (1 tsp) and coat with Ras El Hanout (Morrocan spice - 2 tbs).
2) Dry marinade in refrigerator for 2-3 hrs (overnight if you have time)
3) Heat vegetable oil (2 tbs) in a frt pan and fry lamb for 5- 10 mins, tossing regularly
4) Add capsicum (1 grean & 1 red, cubed), onions (1, cubed), and tomatoes (3 cubed), continuing to mix for a further 5 mins.
5) Once cooked, arrandge on top of Corn Thins & serve immediately.

Beef, Tomato & Mayonnaise

1) Spread a good amount of mayonnaise onto Corn Thins.
2) Place slices of fresh tomato on top of mayonnaise.
3) Lastly layer with thinkly sliced strips of pre-cooked beef
