CORN THINS recipe

Spread mashed avocado & creme fraiche across CORN THINS slices, then top with roasted chickpea. Sprinkle on a few leaves of parsley to finish.

 

Roasted Chickpeas

Dry & drain the can of chickpeas. In a bowl thoroughly mix chickpeas oil & and salt & pepper (if desired). Spread chickpeas onto baking paper on a baking tray & place in a preheated oven @ 230C. Cook for 30-40mins, checking periodically to ensure the chickpeas have not burnt. Take out of the oven to cool prior to use. Any unused chickpeas can be stored in an airtight container.

1 Small Avocado (mashed)

2 Tbsp Creme Fraiche

2 Tbsp Roasted Chickpeas (from above recipe)

Parsley (few leaves)

3 CORN THINS slices

 

For Roasted Chickpea Recipe

400g Tin of Chickpeas

2 Tbsp of olive oil

Salt & pepper (to taste)
